Halfway between Dijon and Paris, in the northernmost region of viticultural Burgundy, sits the solitary vineyard island of Chablis. The region of Chablis produces less than 5% of what it did a century ago despite its large hectarage and productivity. Because of its superior viticultural techniques and reduced yields, this wine has become a perennial favourite. In order to ensure that the fruit’s quality is consistent year after year, Maison Louis Latour chooses portions of vines within Premier Cru appellations.
